Pineapple Dream Cake

Ladies this cake is both super easy and delicious! I made this cake for the Fourth of July and it was a HIT! I would make sure to give yourself enough time to bake the cake, let it cool completely, and then frost it. Unless you’re into the hot cake/hot cream cheese icing thing… I say go ahead and make it your own đŸ™‚

Ingredients:

2 cups flour

2 cups sugar

2 teaspoons baking soda

2 eggs

20 oz. can crushed pineapple with juice

1 cup chopped pecans (optional)

Icing:

1 stick of butter, softened

1 8oz. cream cheese, softened

2 cups confectioners sugar

1 tablespoon of vanilla

Directions:

Cake:

Mix the dry ingredients. Add in the eggs, pineapple along with its juice, and the pecans. Stir just until moistened. Pour into a buttered 9×13 inch baking pan. Bake in preheated 350 degree oven for about 35 minutes or until toothpick comes out clean. Cool completely. (trust me you want it to COOL COMPLETELY) 

Make icing: combine cream cheese, butter, confectioners sugar, and vanilla. Beat until smooth. (you will want to use a stand mixer or a BIG bowl so the sugar doesn’t go flying everywhere) Frost the cake using all the frosting! Enjoy!
